Game hens on the PBC

Did some game hens on the PBC the other day. Brinef them in a maple syrup brine for a couple hours, smoked with a chunk or two of maple, then glazed them the last 15 minutes with maple syrup. They were fantastic. The flavor was perfect, and not overpowering the delicacy of the hens.
