4th of July Rib Off

We had a neighbor hood rib contest to start off the celebrations.  There were 8 of competing, it was alot of fun.  We had 2 racks each, with a 3pm turn in.  I used Memphis Dust, from the Amazing Ribs site.  That stuff is great, I also used some Hickory wood chunks.  I rub the racks and let them site over night.  I did one rack of spares and one rack of baby backs.  I put the spares on an hour before the baby backs.  They came out great, and took the top honers.  Which led to the big prize of bragging rights for the next year, and a cold beer of your choosing out of any cooler.  I had no ribs left in my pan at the end, unlike some of the others.  This was a real good time, and we all ate like kings.
