Made a few newbie mistakes,I thought I had enough charcoal in the chimney,24 cubes,but wasnt enough to light it all.So ran first hour at 257F.Cracked the lid and got temps up.

Used the spices that came with it. Spatchcocked 2 chickens.

2 St Louis ribs.1 beef rib I had. Did half with a 20 minute finish of KC Masterpiece,and the other half Kraft Hickory sauce. The Masterpiece was better.Beef ribs hugely overcooked,and I dont even care.

The chicken was crazy moist,the ribs were best wife ever had,and I can see where a little practice would be really good.

So here it is...Wish the pictures were better















Blew the diet totally today,oh well...

That's a fine looking barrel full of food spuds. You did a great job on your first cook in the PBC, may there be many more like that.  ;)
