I thought you guys might like an update.  Here's my first attempt at dry aging beef with The SteakAger. Certified Angus Beef rib roast after almost 27 days. I'm planning to go to 35.

Large Big Green Egg, Traeger BBQ075, NBBD, La Caja China, Brinkman All-In-One, Weber Q200, Weber Q220, Weber Q320, WSM, and more Weber kettles than I care to admit.

Looks interesting, but Kimmie would never go for it.  She would say the steaks are bad and would toss hers in the garbage  >:(

I don't know.  The cut of meat that I got was too big to fit so I had to cut it down.  I thought it would be disgusting to weigh it on the bathroom scale so I just put it in without weighing it.

Here it is cut into steaks.



The steaks after trimming off the pellicle.



And the scraps which will be used for broth.



I'm going to smoke and grill a couple tonight.  I'll fill everyone in on the results.

Well, here's the finished product.



Coated in Char-Crust and then smoked with oak on a Weber kettle and reverse seared.  Perfect medium rare.  The family really enjoyed the taste and texture of the dry aged beef.  I'm ready to start my second round of aging.
