Don't know how I missed this but apparently Bon Appétit magazine put together a series of videos/shows showing how to butcher animals we typically eat with explanation of the individual cuts. The first season showed cow, pig, lamb, and tuna. Head on over to YouTube and check it out.

Nice, Turtle!!

I remember going down to the fish market in Honolulu while I was stationed at the sub base years ago and watching them slice and dice fresh tuna.  We used to buy thick tuna steaks and grill them on a hibachi.  Good eats!!

Thanks for those links Turtle. My Grandfather was an old school butcher, he grew his own cows and pigs and butchered them and sold them in his butcher shop. I always wanted to be a butcher.
