Japanese Hibachi on the Blackstone
« Reply #-1 on: February 18, 2018, 10:12:08 PM »
The wife and I like going to a Japanese hibachi restaurant now and then. So when I was thinking of something to cook this weekend, I thought a hibachi meal on the blackstone would hit the spot
Some rice with egg, peas, carrots and soy sauce; some shrimp; steak; and veggies cooking on the griddle.

All done and on the plate with some homemade yum-yum sauce on the side.

Must say it came out great and we really enjoyed it.

In Japan (and Hawaii) what you made is teppanyaki (broiled, grilled, or fried on an iron griddle). Hibachi refers to a (usually small) charcoal grill or brazier. In Alabama I guess it's whatever they can spell or pronounce.

In either case, it's a great lookin' meal.

Not sure about Japan and Hawaii, but in most of the mainland they call them Hibachi restaurants and do little tricks when they cook. Granted the tricks haven't changed in decades. Maybe they call it that because it takes less letters on the restaurant to call it hibachi than teppanyaki.
I should clarify, you are correct that they cook on a teppanyaki  griddle, why they call them hibachi restaurants when most don't even have a hibachi charcoal grill, is your guess as good as mine. Like I said, maybe its cheaper to make the signs.

Just googled yum-yum sauce and picked one of the many recipes. Sorry, I didn't keep the one I used.

Great looking food. Better than the takeout i ordered the other-day.  It might just be my location but Chinese takeout has gotten so expensive and the quality isn't that great.
Love to cook and eat

We have a local hibachi grill buffet that is really good. (they use a flattop)
I need to hit it at least every couple of months just to get my sushi fix.
They have a great sushi bar, but to get the best sushi I go to Indy.

To the Turtle's point, I do remember (back in the day) cook one of these Hibachis:

Then, looong before anyone here ever heard of Sushi, we had these things called Japanese Steak Houses.  There you'd have about 8 people sitting around a big flattop and the cook would come out and flip shrimp into your cocktail,  but end up with something very much like what Gus served.  (Looks tasty ! ! !)

At least, locally, those things have turned into these Sushi/Hibachi restaurants.
