Boneless/skinless Chicken Breasts on the PBC

Hey guys, I finally made some food that my gluten-free/dairy-free/red meat-free fiancee will eat so naturally I had to post pics of the cook! It was finally warm out this weekend so we stopped by the local Sam's Club and bought a 8-pack of boneless/skinless chicken breast (which we were assured was gluten-free). I trimmed up the breasts pretty thoroughly and let them brine with a bit of olive oil and all-purpose rub for about 24 hours before the cook! I didn't know what the grill temperature was during the cook because I had both of my probes in a piece of meat (one on each bank of rebar), but I pulled them at 165F IT after under 45 min on the PBC. I hung all 8 breasts (conveniently we have 8 hooks...), 4 on each rack and added 3 medium sized chunks of apple wood. Of course, we paired the meal with some homemade curly fries, so you can see all that good stuff below:

Shredded smoked and sauced chicken?    Plate me up, that looks excellent. Don't go lite on those curly fries either.  ;)

Looks grey to me Kris! How did you cut and bake the curly fries? Did they have the taste and texture of fried? Always looking for better/healthier ways to make dinner!

Not quite the texture of fried, but honestly, I LOVED them. My fiancee got me into the "spiralizer" so we bought a nice one. It does noodles, curly fries, angel hair, etc out of whatever vegetable you stick on it. We're going to try zucchini noodles for a pasta here pretty soon! We cooked the fries at 450F for 12 minutes on each side and they came out PERFECTLY. We tossed with olive oil, garlic powder, and salt/pepper. Also they didn't burn/stick because we put them on parchment paper. If we had more patience, we could have spread them out more thinly and got them crispier though...

What a great looking meal! The spiralizer is cool - I like using it on a variety of vegetables. I've never tried the boneless / skinless breasts on the PBC - great idea - thanks for posting it.

Yeah, I guess we got a winner because the fiancee says it made the best tasting chicken sandwiches she's ever had! More excuses to buy meat and fire up the PBC!

We're probably going to add some Lawry's seasoned salt next time. The fiancee doesn't like much spicy food, and I'd like to keep her hooked on the cooking...maybe she'll start funding some of it someday haha.
