CP Pickled Beef Tongue

I thought I better get this posted; I bet all out there is gonna want to try this! :) My Mother in law use to make what she called pickled tongue a lot. They always served it cold sliced on crackers. I don’t remember it as having much of a sour taste but like tender roast beef. I wish I had thought to get her recipe and she didn’t have it written down.

I got this tongue from my butcher and it was frozen. After thawing I soaked in some salt water for a half hour then rinsed well before getting it in the Crockpot.

I have made tongue a few times over the years but just slow cooked it in water and seasoning. I searched on pickled tongue recipes; I found one for doing it in a Crockpot that included some vinegar.

1 beef tongue
2 quarts water and more to cover
¼ cup vinegar
2 teaspoons kosher salt
12 whole peppercorns
4 bay leaves

Place all in a Crockpot and cook on low for 10 to 12 hours. Remove tongue and when cool enough take the skin off it should just fall off easily. Mine was in 11 hours and was well done. After I remove the skin I scrape it some and trim out some from the center where the root was; it tends to be a little mushy. I usually just cooled and then sliced. This time I cut about half from the front and wrapped and in the fridge to cool for slicing. The rest I cut into 3 pieces and pulled it. It is pretty stringy so it pulls well.

This is one meat I have trouble tasting as I am preparing; it is not very appetizing to look at. It is best for me to wait until the next day! I just had some of the pulled on saltines with a dab of horseradish for my lunch snack and all I can say is delicious!!!

I know it doesn't look to appetizing in the "raw" state, but I have had some thinly sliced beef tongue from a deli that was really good.  The pictures of the pulled meat look good.

Like a lot of other things you've just got to get over the name of it and give it a try.  For years I avoided yoghurt because it sounded like a cat about to harf a hairball  ???

Years ago I was in Canada on a fishing trip with my dad and brother.  The lady that ran the fishing lodge made us tongue sandwiches for lunch.  They told me what it was after I'd eaten it.  Great sandwich!

Haven't eaten tongue in YEARS.   We had a fair amount of it during WWII cause it wasn't rationed like most of the other meats were.    Few times since from deli's.   Wonder IF I could get away with buying one and trying it again.     Bet I'd get drummed out of the house!

Whole heartedly agree with Don - some of the richest tasting roast beef too.  Never had it pickled, just boiled though.  Might have to give that a try

I make tongue once or twice a year but have to schedule it when SWMBO is nowhere near home. She refuses to even look at one in either the raw or cooked state, having once said she wasn't about to taste something that could taste her (although she did eventually realize that probably wasn't the proper analogy).

I haven't tried the vinegar version yet - is it significantly better or different from boiled?

MB and Ka Honu I could not taste the vinegar I suppose someone with better taste buds may. I think I prefer the shredded over the sliced. Here is a recipe I was going to try the next time I do one. It should be good and sour beef taste. Don

Pickled Beef Tongue

o   4 cups water
o   1 cup sugar ( to taste)
o   2 large onions, sliced
o   1 teaspoon pickling spices
o   1 teaspoon mustard seeds
o   1 bay leaf
o   6 garlic cloves
Directions
1.   Boil tongue in salt water for 3 hours. Peel skin from the tongue.
2.   Mix remaining ingredients in a large, nonreactive pot and bring to a boil.
3.   Add meat and boil for 10 minutes.
4.   Cool and store in refridgerator for one week.
5.   Slice tongue thinly to serve.

I have one recipe on file for tongue in the crockpot (Throw in the ingredients and cook) and another (I haven't tried) for corning the tongue for a week in a brine (with pickling spice, salt, brown sugar, & garlic) before cooking. Just hadn't come across one with vinegar before. Let us know how the next one (with the serious amount of vinegar) goes.

Don..I do know the vinegar is to help tenderizer the meat and it brightenes the flavor of whatever you add it to..I use a lot of it and lemon and citrus juices. Still looks nasty.  .☆´¯`•.¸¸. ི♥ྀ.

Do what my grandma did to me the first time I had it. Cook it when she's out of the house, serve it sliced on the platter and if she asks what it is tell her to "shut up and eat it or go hungry".  Never mind, it may not work with my wife either  :D
