Sausage Gravy Pizza

I had this idea one day this week while trying to come up with a something different to cook in my Ultimate Cookstation pizza cooker. I'm sure it's not original, but it was for me. :-)

So today, after I got my pork butt (99 cents/lb!) on my PBC, I decided to try out the sausage gravy pizza idea. Since I'm not much of a gravy maker  :-[  I bought some Bob Evans Sausage Gravy packs from the store. I had also decided that I would try out biscuit dough for the crust. I pressed out the dough and added a fairly light layer of shredded cheddar. I heated up the sausage gravy and headed outside. I cooked the biscuit crust until it was biscuit-brown. I came back inside and poured the gravy in and spread it out.

I plated, added cracked pepper and hot sauce.

I thought it turned out pretty good, not great. Potential changes next time include rolling out the biscuit dough thinner, possible going with no outside crust. If I increase the area of the crust, then I'll probably add a second pouch of sausage and gravy.

Sausage gravy is very simple:
2 Tbs flour
2 Tbs fat (butter, sausage or bacon drippings, whatever)
1 c milk
Brown and drain your sausage, combine flour and fat in saucepan, cook a little, whisk in milk and thicken. Add a little salt and pepper as it cooks along with any other spices you prefer, I like a little basil and/or chives in mine. This will yield a "medium" thickness white sauce. Stir your cooked sausage in and done. Very basic. I usually double the white sauce recipe per pound of sausage. You can also just brown the sausage, stir some flour and spices into the pan then add and whisk in your milk.

I have never been able to eat pizza for breakfast...but THIS will be a breakfast pizza for me too ;) ;D

Put this on a pizza crust like you would pizza sauce with some scrambled eggs, cheese, cooked bacon or canadian bacon and whatever other toppings you like for a great breakfast pizza!
