Mini Caprese Appetizer

A simple GREAT tasting appetizer to bring to any gathering.
I start by drying all mozzarella balls. I then lay them on a frogmat (http://www.cookinpellets.com/frogmats/) in the grill and cold smoke for about 15 minutes. Then cut grape tomatoes in half. I use about 2 tablespoons of an Italian seasoning pesto from Gourmet Garden, basil, thyme, rosemary, parsley for a whole container of mini mozz balls, about a pound, I roll the minis in the pesto and slide them on followed by half a grape tomato then a mini then another tomato then finish with a mini.
I then brush on a 20 year old Balsamic Vinegar. OMG TOO GOOD!
