Some of you might have seen my post about the Red Copper Pan I bought. Well it works ok but does not live up to their claims. My wonderful girlfriend surprised me with a full set of Calphalon Ceramic Cookware...



And OMG I am so impressed. Nothing and I mean nothing sticks to these pans period. And they are really durable, scratch resistent, and have some weight to them. Very comfortable handles and well balanced. I almost feel like I have been living in a cooking cave not knowing how a real non-stick pan can really be.

The first eggs I made were sliding around so much it almost scared me lol.

The Red Copper pan surface is already getting scratches. And although the eggs do not stick they definitely don't release on their own. I think the Red Copper might make a good camping pan for me or just might toss in the trash.

Cool... nice to know about something that actually works.

I've got a couple of the Techniques pans that we bought probably 15 years ago on QVC and they are finally getting where the non-stick is not so much a non-stick anymore.  So many of the newer less expensive pans are thin metal.  I'll have to check these out as potential replacements.

That's one of the better ceramic sets at that price point.  A few tips to keep em rocking like new longer.  Go easier than you're used to on the heat and invest in some silicone wrapped cooking utensils.  Even bamboo can scar those when they are hot.  It's a good set you're gonna have some fun with it. You can take a 16oz bottle of balsamic and reduce it to 1/2 cup and they will darn near wipe clean with a paper towel.

SO...what exactly is the "ceramic" coating.

I am asking because - well, I like the concept and idea...but always question what the marketing language calls things - vs the actuality of what is it.

Pure ceramic dust - baked on the pan itself? With no other diluents, flow enhancers, mono or polymeric extenders? Why am I going on like an OCD Rainman? ;D...

Well - we know that pure ceramic/porcelain/glass are as inert as it gets. They do not contribute any chemicals to our food. I LIKE THAT.... Even better than stainless or cast iron.

But - in practical terms... can I find out enough about this cookware to quell my anal-tetentative suspicious nature tantamount to the Spanish Inquisition... :D ::)...?

 Kerry's mom bought us a couple of the premium black pans and we love them. 

An Tim , Dont worry... The FDA and the EPA have been paid enough to list both of these type pans safe!

Saw the frying pans at Costco this morning Mike. They were like $49 and some change for the two. I think it said they were oven proof to 600ºF. I always see chefs on cooking shows searing meat, poultry, seafood and then placing them directly into a preheated oven. I've always wanted to learn to do some of that kind of cooking.
