What temp did you smoke those beautiful ribs at? Love my SnS but still learning how to stabilize the temp.

I am going to say we cooked at around 250F.  What kind of temp swings are you experiencing? Ia m sure there are a lot of S&S owners here that can offer their experiences.

Problems with temp management are usually do to a leaky lid.  Binder clips can help quite a bit:

I watched this yesterday. Tim, you have a great voice for this type of work. Dave, you did a great job explaining the features of the SnS. Cliff, that was fantastic editing.  Ribs, you looked amazing. lol.

Seriously, I'm pretty sure that's the 2nd best "first youtube video" I've ever seen and the only one I've seen that was better was from a woman who turned out to be a professional TV news person as a day job.

Loved it! I can't wait for the next one.

Geez Justin....That is more than just high praise from a guy like you. I think YOU bring the nicest production quality to videos I have seen!  I wish I could tell you that there was a lot of prep involved. There were no notes, no script. No real plan. It was just a couple of guys talking about a great product and sucking up ribs like a street sweeper..... :D The Cliff worked on removing the parts where I was picking my nose, swatting flies and chasing my tail while barking like a dog.... :D :D :D

tee, when I try for 225-250 it will take off and run to 350 or so. I end up closing/adjusting vents, removing some charcoal,then it gets too low so I reopen vents, etc. Food still turns out good tho.

My lid does leak quite a bit. I'll try binder clips and see if that solves the problem. Thanks.

Just watched the video. My lid leaks much more than the one in the vid. Off to OfficeMax in the morning for some clips!

Try accessing the forum WITHOUT Tapatalk Pappy..It will work more consistently ;) Not an issue with he forum software...A reoccurring issue with Tapatalk.

If the warpage in your lid or base is beyond what the binder clips could fix...I wonder what a thin high temp gasket of the right width might do? I do expect it would not be a permanent solution, in that you would likely have to be re-done fairly often.

If the lid is warped lay it on a flat surface like your garage floor.  Look for spots that bow away from the ground.  HUG the lid at those spots and place the lid back on the ground.  Repeat until you've gotten it to flatten out as best you can against the ground.

If the binder clips and the hug technique don't work then go for the gasket.  Or if you just want a gasket you can do it first!  A combination of these three techniques will get 'r done though.  :thumbup: ;)
