Slow-Cooker Stout and Chicken Stew

There's not many healthy St Patrick's Day recipes out there, but this one is not only heart healthy,  but darn tasty to boot!  It comes from the EatingWell site. I put it together after my cardiac-rehab class.

It called for boneless skinless chicken thighs,  I used skinless. And in making the roux it called for 3 slices of bacon, I used one thigh skin cut up to render a little fat.One last substitution was instead of salt I used Mrs Dash lemon pepper.  Other than that followed the recipe. It was wonderful and will make this again!

Boy I know that after having a foot of mine removed 11 years ago :(

Just remember kids, life is no longer fun when you have to read a  cereal box for FIBER content not which toy is in there :(
