I also am trying to limit my carbs and have lost about 25 pounds without excessive dieting.  In addition to the spiralized zucchini, I have made collard greens in my pressure cooking cooking it for about 20 minutes.  You can always add some  marinara sauce to kick up the flavor.  I want to ask everyone to post their ideas for more tasty recipes.

Tommy, Google spiralized zucchini noodle and shrimp recipes.  We bought a spiralizer and have been using zucchini noodles in several dishes.  Shrimp and zucchini noodles are especially good.  You can use the spiraluzed for butternut squash, as well as other veggies.  Very versatile.

EDIT:  I didn't read the entire thread before posting.  I see that spiralized zucchini noodles has been covered.

Got to thinking about what can I eat that's low carb and it hit me to cut spaghetti squash noodles very fine like rice .

Pan fry in butter just till crisp (few seconds) then use as you would rice in a dish.

Anyone got ideas about this?   Truly trying to find new things to eat

Cauliflower is a blank flavor canvas.
I prefer not to get full on fillers so I stick to protein and fat. But I have made faux risotto and faux mash from cauliflower. You need to season it heavily otherwise, on its own, cauliflower tastes like a used mop. (NoI haven't tasted a used mop HAHAHAHA)

For me, veggies are just fat transporters. I'll mash a little cauliflower and load it with kerrygold butter and some real Parmesan cheese. Oh it tastes really really really good.

Boy you ain't kidding  :P :P :P :P   I have tried to eat cauliflower but just can't get past the taste  ??? ??? ???

I never tried that but it might work. I think you want high heat roasting for browning, so maybe try first in oven, just break the head apart coat with oil, season however you like and spread on baking pan, maybe at 425. Just watch for browning till your preferred doneness. I'm sure if you google you can find recipes. It's the only way I eat it now. U can also mix with cheese And other things then mash if you like. Also good to roast with garlic and onions
