convection oven fan in smoker

The smoker I'm building is going to be heated with an electric element and I'm going to be using an A-Maz-in product for smoking.  My cabinet will be a little taller and would like to add a fan to the cabinet to help distribute the heat evenly.  Looking for any recommendations on how to do that.  Thanks.

If you plan to use an A-Maze-N smoker as your smoke source, then it's critical to have enough venting (top & bottom) to allow enough oxygen & air flow, otherwise the A-Maze-N smoker will choke and go out.

I am going to recommend that you begin your search for a variable speed fan. These are typically a DC rectified motor fan. Look for one that is variable - in the low range of speed. Tent is right - you do need "enough" air thru-put...but how much is the question. I think that having a rheostat based knob control to a DC rectified fan will give you the ability to match the need for air for your Amazen Smoker to work properly - and it will allow you to influence the temperature ( - as well as humidity to a lesser degree) inside the cabinet.

Time to confess.....

I bought this stainless proofer/warmer at a school surplus auction for around $85 quite some time ago with the intention of converting it to a smoker.  Problem #1, it's too tall for where I want to put it but I just can't part with it as it will be an awesome smoker.  The heating element is on top and it has 2 convection fans that suck air from the proofer chamber, blow it across a finned heating element, and then down a 2" channel on the right side of the proofer interior.  This channel has louvers all the way down and it evenly distributes the heated air.  Wife keeps threatening to bury me in that thing LOL!!!  It's big enough.

My point is, you may want to consider something like this for your build.  The proofer I found was a McCall model and it's all stainless inside and out.

I used a covection fan for a stove in my Bradley.

You can buy them on ebay for cheap.
