Pork Belly Burnt Ends w/SNS+DNG

Sounds good. Somebody make em.... Ok I'll volunteer.  Here they are just on for 15 or so just locking in at 250ish.  Which is where I'm shooting for to start.  A lil cherry and apple wood for smoke.
This is actually tomorrow's dinner I've got some good looking dry brined filets for the grill for dinner. Trying to decide between sous vide then hard sear on kettle or reverse sear the on kettle only.

Now I'm new but to my understanding Kimmie also likes her meat lets politely say a lil bit overdone, so I'm immediately putting her judgement in question.. except in her choice for a lifemate/personal chef of course..  However, she could be right. This is my first attempt at any belly at all. So it could end up being a waste. Fingers crossed!!

That's an under statement  ;)  BURNT is a better word  ??? ??? ???

They look like they will be good, just  post the results good or bad this is how we learn  ;)

Well here they are served over creamy cheddar polenta and we had unicorn grilled asparagus. I forgot the spring mix for salad so I'll turn my roasted garlic apple vinaigrette into a marinade for some PT for maƱana..
