Spicy Sicilian Pizza
« Reply #-1 on: May 31, 2017, 07:13:43 PM »
I'm back with something good y'all! I made a Sicilian pizza for dinner tonight and it rocked! I made up some fresh dough and some spicy garlic sauce using San Marzano tomatoes. I put some spicy pepperoni and hot Italian sausage on there with over a pound of fresh grated mozzarella, provolone and parmesan cheese. The dough basically gets fried in olive oil as it bakes. It is some righteous stuff! Crispy and chewy.

I used This Recipe for the most part. I added some honey and a little basil to the sauce and for the pizza I used less olive oil than it called for in the pan. I originally used what it said but ended up pouring some off after the dough was risen. I also used  more cheese than called for. It's pizza, you make it how you want. I added sausage and it was a good addition. I par cooked the sausage before putting it on the pizza.

Enough talk, take a look!

I ate 2 slices and was full! Now, I have all of this pizza left over. I guess I know what I am eating for lunch tomorrow, lol!

Great looking pizza RG!  My son-in-law got me hooked on the Serious Eats site a while back when he asked for the Food Lab book a couple of Christmas' ago.  They have some great info on there.

Thanks for the compliments y'all! It is a good recipe and I will be making it again. I didn't use "Old World" style pepp from a charcuterie shop in little Italy (they want you to not use pre sliced stuff). I bought a pack of Hormel Spicy Pepperoni and it worked fine, lol. As I said above, I felt like adding sausage to it so I did and believe it or not I used sausage made by the people that make Bubba Burgers. They call the sausage Bubba Grillers. I bought a pack of spicy Italian and just split the casing on 2 of the links and made them into little meatballs to partially cook in a frying pan. I also didn't use any tool to smash tomatoes in the pot, seemed silly. I used my hands and crushed them, also cut off the stem end from the tomatoes as I squeezed them into the bowl. Got it the consistency that I wanted, weighed it out and into the pot. Whatever works I guess.....

Everyone in the house loved it except for the Vegan Daughter, there's no saving her. :P
