My first attempt at dry aged rib-eyes

So I was introduced to dry aging bags by another member and thought I would give them a try. It was my first time out so I did not want to ruin an expensive large roast so I started with a 4lb bone-in rib-eye roast. I had to file down the edges of the bones so the bag would not tear(they are thin). And because I have the upright food saver I had to use these special fabric inserts to get a proper seal...



After several minutes of cussing to get the pieces of fabric in place while at the same time sliding the bag into the sealer I finally got it... on the first try ;)



Now into the fridge on a Bradley rack for 30 days...

Yes. Mine is the V3460.

They have a video of that process...



Now the video makes it look much easier than it is. I got it on my first try using a little different technique.  The hardest part is keeping the fabric(mouse vac) pieces in place inside the bag while sliding the bag into the foodsaver. I will put together a little pictorial of how I did it and post it here.

Yes I got the sampler pack seemed like a better deal. Although the small bags will be useless and just for practice. You are not going to dry age an individual steak. When you remove the outer crust you will end up with very little steak left. It might work on a 2 1/2 inch thick rib-eye but I don't think they will be very thick when done.

If this is successful I will do a large packer brisket or full rib-eye roast next.

Just did not want to start with huge, expensive cut of meat until I know what I am doing ;)
