Chicken sausage w/pistachio and dried cranberry

This is a great tasting sausage that is made with chicken thighs, or thighs and breast meat if you prefer:

5-lbs of chicken meat - ground

3-4 tsp of sea salt

1 Tbs granulated garlic

1 tsp cracked black pepper

1 tsp coriander  ( more if you like - but be careful - powerful!)

1-tsp of red pepper flake ( more if you want heat )

1- cup of coarse chopped salted roasted pistachios

1-cup of dried cranberries

I stuffed these into hog casings, and hot smoked for about 2 hours until the IT reached 170F

those look really good T.  i like that is was made w/ chicken.  how did you get the little knots in the end of the sausage?

It was in the 20's and a light wind. My hands were not working real good - so I would cut the casing and tie a knot - because I did not have enough practice or experience with stuffing a whole gut of casing, then pinching, and twisting, etc.

SO, I just would fill one, cut and tie. I have since learned how to do it tho- These are some Italian sausages I did later:

Those look outstanding T, I  have a sausage at home a coworker got me from the farmers market with cranberries in it. I almost cooked it last night but had a german pretzel and mustard instead.

Yep...it is an interesting way to add a sweet/tart note - I like it. Give cranberries a try in some BBQ sauce, or even in a marinade for pork or ...?

Gee...I am sorry - I left that out of the recipe...fixed it. I put 1 cup for 5 lbs. of meat in this batch.

Funny you say that - I was thinking about mixing in a damp "dressing" or stuffing with the other ingredients, and stuffing a Thanksgiving sausage...

Fried onions!  (a la green been casserole)   They might hold up in a sausage..
