Uuni wood fired dry aged rib eye steak

So my new Uuni pizza oven is so great at making wood fired pizzas I figured I would give a dry aged rib eye steak a try.

Started with a dry aged rib eye seasoned with hickory smoked salt and white pepper...





This sucker is thick...



Fired up the Uuni with perfect mix pellets. After it was preheated I loaded in the rib-eye....



I left it in for 3 minutes and then pulled it. Flip and rotate then back in for another 3 minutes...



Here is the steak and the 2 minute West Coast Toast from the Uuni...

OMG this steak was awesome! Great wood fired flavor and a seared crust. I could have went 30 seconds less but I am not complaining!

Now the next time I may Sous Vide the steak then finish in the Uuni for a few minutes ;)

Wow nice cook Muebe!   Never thought of using a pizza oven for cooking steak!

Man, that looks fantastic muebe - the oven would be worth it just to get steaks to come out like that!

One question - what happens to the pellet ash? Does any of it get into the food?

One question - what happens to the pellet ash? Does any of it get into the food?

Maybe... But does't ash get on food in a wood fire pizza oven regardless of the type?

I imagine there is some ash floating around with all the wood and heated air.

The pellets seem to burn really hot and clean. I don't find very much ash left. And the ash I do find is all contained on the pellet cradle only.

That is a beauty, muebe. Love the crust and the interior looks perfect. Dang, I'd have a tough time choosing between steaks and pizza.
You can't catch a fish if you don't get a line wet...

Perfect - I was wondering about the amount of ash because of the fan operation - and yes, there is always some ash in a wood fired oven.  I actually don't mind the ash at all - in fact one of my favorite cheeses is coated with ash to give it a wonderful chalk-like smoky flavor  :)

The fan does not blow very hard. Just enough air to feed the fire. Once it gets going the fire creates it's own air movement. The design of this thing creates full convection with the double wall floor vent holes.

Man that steak was good! I just finished it and I want another... Maybe tomorrow night ;)

Man, I wish we were neighbors.   :P

Well, after what I saw you did with that ribeye, I really want one for a couple of reasons:
  • It is versatile - can use it for more than pizza
  • So portable I can take it with me to parties and in the RV
