It's Wednesday (the 21st - my B'Day). The wife's working until 8, the kids left to go to youth group. Nobody's home to tell me what to cook. It's just me, the cat, the dog... and a rack of Spareribs!
Ribs are on catching some hickory smoke.
Hmmm... What flavor profile do I want? Oh yeah... "Spicy Sweet Onion & Peach Bourbon Ribs"
Time to foil with a couple gurgles (1/8 cup each) of Bourbon & cider vinegar...
Top with sweet onion, peach slices, a sprinkle of red pepper flakes & some brown sugar. Back on the pit to braise for an hour.
don't waste those foil juices... into a food processor with the peaches, onions & some homemade BBQ sauce.
Glaze & finish the ribs...
When the family gets home we eat, I take my first bite... Happy Birthday to me!
