I enjoyed the article but I do have a question.

I know that a few folks on this site smoke their cheese and then vac seal, and place in the freezer for a least 1 month.

Is this the best way?

Not the freezer but the fridge for at least 1 month.  I fridge usually 6-8 weeks before tasting it.  Many cheeses do not lend themselves to being frozen.

Good article; I have not noticed the cheese being "off" even when it is in a vacuum bag for an extended period.  I have some parchment paper around somewhere and might try the technique as an experiment with the next batch of cheese I smoke.

This last weekend I found a package of smoked cheese from October 2012. I vacuumed sealed it
at that time.  We opened it and found no after taste at all from the vacuum.  Actually the cheese was
really good!

I have had smoked cheese vac sealed that was well over a year old and still tasted fine. I think the smoke does preserve it a bit.

I tightly wrapped in saran swap (no vac sealer for me yet  >:( ) almost a year ago now.  been in the fridge ever since and it is still looking ok.  Maybe a little bit i have to cut off but seems good.  No expert cheese taster so did it hinder its taste?  I don't know, but seems good to me.
