Greek Style Ribs and Potatosalata
« Reply #-1 on: April 06, 2014, 12:39:42 AM »
Mar 05 2014

I was hungry for some ribs. I wanted BB’s but all my butcher had not frozen were spares so I went with them. I wanted some a little different so went with some Greek style. If I don’t do standard BBQ ribs these are my favorite.

My butcher had this rack trimmed out a little better than most of the time so all I did was cut the flap meat off. It would be a treat for the cook, dusted with Tatonka dust to see how I like it on ribs. I pulled the membrane and got it seasoned and plastic wrapped for about 4 hours in the fridge before smoking.

After lunch I boiled the potatoes for the potatosalata; and I used Cat Coras, from Foodnet, recipe. The potatoes were Ruby Sensations from Canada and turned out great. They have red skins but the flesh is more yellow than most red potatoes. I changed her recipe some; I used Penzey’s Greek salad seasoning, a Peru sweet onion instead of red, and added some lemon zest. After mixing all up I tasted and added some oregano.

I then par boiled some green beans for 3 minutes and then cooled with cold water. At supper time I coated them with a little flour and fried them in butter, olive oil and added some dried shallots, salt and pepper. They were in about 20 minutes on med. heat.

The ribs I did at 180 deg. for 1 hour; then I went to 225 deg. grill level. I checked them 3 hours in and went to 300 deg. grill level for the last 1 hour. I had some pretzel bread sticks I heated up to go along with the meal.

Ribs were good and tender. The wife thought the ribs were extra good. I loved the Tatonka dust on the flap meat; I gave my wife a bite and she said it was good. My next rib cook will be with Tatonka dust.

Rib recipe:

Greek Baby Back Ribs

1 or 2 Racks of Baby Back Ribs or spare ribs
2 to 4 garlic cloves or more to taste
dried oregano to taste
Juice of 1 to 2 lemons
Lemon zest (Optional)
salt and pepper

Mince garlic and press with back of knife to turn into a paste. (or use a microplane). I prefer just chopping the garlic fine. Rub ribs with garlic, rub on oregano, salt and pepper and lemon zest if using. Squeeze juice of whole lemon over each rack of ribs a few hours before cooking.

Note: These can be marinated overnight, but do not add the lemon juice until a few hours before grilling or the lemon will change the texture of the meat.
For my taste you need the lemon zest.

I used 3 garlic cloves for 1 rack & would have liked more, but I am a garlic lover. I marinated for about 4 hrs.

Smoke or grill these your favorite method. I usually do them one hr. on smoke mode 180 deg. then go to 225 deg. until done, usually about 4 ½ hrs. total.

Excellent looking meal Don.  I want to try that potato salad.

How did you season the ribs? It looks like you added some strips of lemon zest to them.

Cliff caught a misprint for me so I changed it. Now Cliff yes I used lemon zest, the recipe is at the bottom!  ::) I also changed the last hour of the ribs I did at 300 deg. and not 350. I kind of go by looks on my ribs and sometimes I up the temp the last hour of cooking. These were just about right had some tear when I picked them up. Anymore I very seldom go over 4 1/2 hours for ribs. Don

Don,
As always, a great looking meal.  I haven't tried any Greek style ribs, but I have done a potato salad very similar to yours.  On to the ribs!!  Bookmarked!
