The sirloin is my favorite cut -- best beef flavor on the critter by far.  Wish I could train a butcher not to cut all the fat off, though.    Your pics make me hungry.  May have to head for the store today.

The only negative comment about the cook is that because of the meat grain orientation being vertical - it was not as tender as it could be.

But - Hub, you are right - the  flavor is the greatest.

I have found a meat cutter ( I wouldn't call him a butcher - in the positive sense ;D ) at a grocery store that when sirloin is on sale - I ask him to cut the Tri-Tip out of the sirloin roast. The grain orientation, and fat cap on it make it a full substitute (maybe better) for brisket, IMHO...oh, sorry Smoke...I meant IMHGMO ;D

(keep it up smoke....your next re-order may have a little fine ground ex-lax added! HAHAHA ;D )

It' s o.k. muebe......the rest of the country is counting on you guys on the West Coast to re-invent stuff, and discover new ways to do things. No failures - just diiferent! ;D

( When I saw how you used it - I thought you were trying to have your salad on your steak ;) :o ;D )

BTW- I accidentally modified your post above - then went back and fixed it after more caffeine brought back some mental clarity .....sorry :-[
