Ok, 1 week until til "Daddy and His Holy Smokers" makes their debut!
Plans are coming together and this weekend were dedicated to making the sauces for the weekend.
I got the WSM 22.5" for the weekend along with my Red Box. I have the ribs sourced from a local company using local, fresh meat.
I have most of the equipment together and a general plan and timing. Some final notes will finish it. I pick up the charcoal for the weekend this week when I pay for the rental WSM.
Practice is done with the ribs.
I plan to use a special Bourbon wing sauce for the people's choice wings (one I am still developing), a smoky chipotle Honey BBQ sauce for the thighs (one my brother made - and no, I cannot give that recipe out!- I still need to practice. I think it is a little spicer than I would like, but it is a good mix.) and a bottled local sauce for the ribs while using the rub mixtures I picked up recently.
The $50 initial cost really cost a couple $100 because of the supplies and the ingredients/ practice - but it will be fun.
I have to laugh, they mentioned there is a beer competition... Winner takes home all the beer if you win the category chosen at "First Shot". I guess my bourbon sauce will be a hit with all of the drinking....
