I was asked to make a couple of Briskets for my buddy's 40th B'Day party. I started with a couple of Prime Briskets from Costco, got a good deal on them at $2.99 a pound for full packers.
Was working in Billings MT this week, so I didn't get to do anything fancy with just a bit of garlic powder, kosher salt, and some Montreal seasoning.
Used Kingsford Hickory Smoking Logs for the smoke. I tried to supplement them with both regular charcoal and cowboy lumps but I kept chasing my temps ( 225 goal ) so I finished up with just straight wood. I pulled them at 160 IT and FTC'd them for abut 3 hours.
People were eating it as fast as I could cut them so I didn't get any money shot photos, but it was really good. The flats were not as tender as I hoped, but not bad for the first time smoking on wood.
