I had to recharge my sourdough starter so it was time for bread! Rye sounded good and IMHO rye makes the best toast!
Made the dough a little wetter than usual trying for larger holes.
1st pic is dough after rising and folded.
2nd pic is dough on a towel before proofing.
3rd pic is dough covered by towel to be proofed for 2 hours.
4th pic is proofed dough in pre-heated CI Dutch oven ready to bake.
5th pic is rye bread just out of oven.
6th pic is bread on cooling rack.
Now I need some pastrami!
