Two Saturdays ago Mr. and Mrs. Tee came to watch the Vol/A&M football game with us. I fired up the Uuni for some homemade pizza. It was extremely windy outside and I had some serious “fire management” issues. It took a long time to get the unit hot enough to cook a pizza. In the end, all worked out. I wanted to try something different on a pizza. I just happened to have a couple of nice cold-water lobster tails in the freezer. Out they came. Thawed and chopped up before putting them in melted butters to partially cook the meat. I used the “gravy” I created to baste the pizza crust before adding the chopped lobster, some basil and feta cheese.

One last pizza. Anchovies, mushrooms and fresh mozzarella.
They were all really good. I am, however, going to be adding several upgrades to my Uuni 2. The pizza stone and the fire management tube. I saw what RG’s looks like and that is all it took. Whenever they get them back in stock, I will be ordering it.
