Title: Using grate instead of hooks?
Post by: Sharpsburg on September 20, 2014, 01:00:17 PM
Would it make a difference cooking a Boston butt completely on the grate instead of on the hooks?

I have only used the hooks, but was thinking about just doing the whole cook on the grate because I'm skipping the foil crutch this time and don't want meat to fall off at end of cook.

Other than more cooking space, wasn't sure if hooking added anything that would be lost using grate only.

I haven't done a BB in my PBC yet, but do you think there is enough clearance from the hanging butt to put the grate in just in case it does fall of the hook?  Just a thought.  ;)

Nope. Not enough space unfortunately. I have a big butt. Lol

Yep will update tomorrow. Putting it on around 10am before church. Doing a Cuban style with beans and rice.

Should be just fine.
My only issue with butt in the PBC is I can't collect the juices.

Turned out great. Absence of juices
Wasn't too bad but was noticeable compared to when I hang and finish on grate with foil wrap. But came out great. Stuck on the grate a little on one corner but not too bad.

I made Cuban style to go with beans and rice. It was awesome.

I always use the grate and foil at 160f. Makes the best pulled pork!
