Reversed seared a couple of 2 inch thick Prime NY Strip steaks for Valentine's Day.
Slow cooked em until the IT hit 100 then hit em with the high heat on my Blackstone until the IT hit 125.
Once they rested for a few minutes, they were a perfect 130 degrees.

Not doing too bad other than most problems associated with old age. Both of us are on oxygen and I have trouble getting around like I should. Jan has arthritis pretty bad but gets thru most days better than me. We are a good team and are living as well as possible.

We miss seeing your cooking talents and great food that you produce with your thousands of cookers. I still remember your prize winning ribs that you and Jan and Barney cooked for us in 2011 in Augusta. Best ribs I have ever eaten. Maybe when it warms up, you can get outside to show us your cooking skills once again.
Everybody should go back and look up Old Dave's posts on this forum and see what a Master Outdoor Cooker he is.

In my humble opinion, great people and great experienced cooks on this forum provide the excellent food that we all see on the posts. I have learned much on this forum and continue to look for more ways to improve my cooks. Keep up the good work, all.

I seared them for about 2 minutes on each side.
I also seared the sides of the steaks too.
