I've eaten walleye probably every way a person can but I think I've found a new favorite. Had 6 fillets, cut 'em into fingers about 6" long. Beat two eggs with about a Tbs of Old Bay. 2 cups of panko crumbs, cup or so of fresh grated Parmesan, some Old Bay, lemon pepper, garlic salt and white pepper for the coating. Melted 1/2 stick of butter and lightly brushed the bottom of a glass casserole. Dipped the dry fillets in the egg wash, rolled in the breading mix and arranged in the casserole. Topped with the remaining breading mix, patted it down and drizzled with the rest of the butter. Into a 500F oven for about 15 minutes. Served with garden fresh snap peas and green beans with some fresh lemon for the fish. Best of all? WBLT's with the remaining portions (not leftovers!) BLT with a walleye fillet. That is livin' large my friend!

WOW, that looks soooooooo good. Add a side of hush puppies and you got a meal!

Gonna try this same method with chicken tenders. I've never cooked fish at this high of a temp before but I think that's the key to the exceptional crunchiness
