How to Cook Artichokes

I have tried artichokes a couple of times and have never been able to get them right. So I decided to do a little research to see if I could find the best way to cook them. There were a couple of good sites and videos but I thought this was one of best I had come across and wanted to share.

Not a bad video. I like to steam mine. Then I cut them in half(stem wise) and finish on the grill basted with butter & garlic. It gives then a nice char and great flavor.

I don't eat artichokes much, I like them marinated artichoke hearts. This video has always stuck in my head since watching it over 40 years ago.

I prepare mine like she did but steam them and then put them on the grill.

Serve hot or cold with a chipotle aioli... yummy.

Chipotle Aioli

While this aioli could be prepared in the traditional method with egg yolks, using mayonnaise allow the aioli to be refrigerated for up to a week and reduces any risk from raw eggs.

1/2 cup good-quality mayonnaise
1/2 cup sour cream
1 clove garlic, finely minced
1 teaspoon lime juice
1 1/2 teaspoons dried Chipotle power
1 teaspoon chopped cilantro
Kosher salt
Cracked black pepper

In a medium mixing bowl, combine all the ingredients. Season to taste with salt and pepper. Refrigerate at least one hour before serving.

Went with the steam method with some lemon juice and bay leaves in the water. Then grilled a little. Not sure but I think I over cooked them.  I like them but my wife wasn't too sure.

Looks great to me RAD!

I will brush the chokes with melted butter and garlic while they are grilling. They are grilled for a very short time. Just to give some char and set the butter/garlic.

That sear on that T-Bone is fantastic.

Thanks Mike, I will give it a little  butter and garlic next time and a little less steam. The steak was outstanding. 3, 2 - flip 3 and done.
