Title: First PBC Cook
Post by: HighOnSmoke on October 12, 2015, 07:33:57 PM
I couldn't decide what I wanted to do for my first cook. It was either ribs or chicken. Hey, why not both?
I seasoned 2 racks of spares with PBC Beef and Game Rub.

Put into the PBC using cherry and pecan chunks.

Smoking away!

Chicken was seasoned with PBC All Purpose rub.
(http://i1131.photobucket.com/albums/m550/Michael_Coffman/First%20PBC%20Cook/PC%20Cook%20101215-4_zpsaut2f7we.jpg) (http://s1131.photobucket.com/user/Michael_Coffman/media/First%20PBC%20Cook/PC%20Cook%20101215-4_zpsaut2f7we.jpg.html)

Chicken was put in the PBC after the first 2 hours of the rib cook.
(http://i1131.photobucket.com/albums/m550/Michael_Coffman/First%20PBC%20Cook/PC%20Cook%20101215-5_zpshvc2idak.jpg) (http://s1131.photobucket.com/user/Michael_Coffman/media/First%20PBC%20Cook/PC%20Cook%20101215-5_zpshvc2idak.jpg.html)

Ribs were done in 3 hours and 45 minutes. I sauced them with my 50/50 mixture of Blues Hog/Tennessee Red
at the 3 hour and 30 minute mark.

After a 30 minute rest the ribs were cut.

Chicken was done in 2 hours and 20 minutes. I think it took a little bit longer since I put them in after the PBC
had been burning for 2 hours.

Plated with some homemade potato salad.

Both ribs and the chicken were fantastic. I have never had chicken breast so moist and that includes the times
I have cooked them Sous Vide. This machine is definitely a chicken and rib cooker and a keeper for me!

Mike, I am so happy for you. The good folks at PBC can rest assured that their PBC got into the right hands. Your first cook looks delicious.

What a great "first cook" on the PBC.
What he meant to say is that it was the first cook on HIS PBC.  He and Tim put in some quality time on Tim's PBC at the Cookout with Bremer and hit the ground runnin' when he got it home.
Mike is a quick learner and already knows more about outdoor cookin' than most people I know (present company not included).  He is very creative with his cooking, too.

He will be another great "spokesman" for the PBC, along with you-know-who and what's-his-name.

Way to go Mike!!
