Title: PBC Wings

Wings were cooked in the PBC using ¾ chimney of Cowboy Lump.  Temperature stayed steady at 350 degrees
with the lid partially cracked. Total cook time was 30 minutes.

Served with store bought sweet potato fries, garlic toast and ranch dressing.

Moist and tender with crispy skin.  Delicious meal!

Wings look fine. Love wangs off the PBC. I see you had the lid cracked...did you also have the rebar out ?

Yep..used one of the rebar to raise the lid.  Next time I will use a little more lump.

You're not supposed to use it with the lid cracked and 1 rebar out...and 1/2 chimney of charcoal.
That's another thing I like about your cooking, Mike...you think outside the box and think about new ways to use your cookers.

I tried a recipe that I found on America's Test Kitchen:

1 1/2 tsp corn starch (helps crisping)
1/2 tsp pepper
1 tsp chili powder
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp sugar

You will notice NO SALT. I brined the wings in 1/2 cup of salt water (2 quarts) for 30 minutes, then seasoned right before putting on the grill.

I will be using this one again. The corn starch, to me, works better than baking powder.

Thanks for the recipe.  Great to see that.  The sugar would help with the coloring and crispiness too as it caramelizes in the heat.

I love wings. Problem is, my wife isn't. And she spells isn't with all capital letters. Nonetheless, I'm going to try this. I'm a big fan of America's Test Kitchen, so I'll do the rub you used as well as brining the wings before hand.

thanks for putting up that spice recipe and your salt brine, i think im gonna try it!!!  now that you tried that recipe any modifications on the seasoning or did you like it as is?

Let's put it this way. My wife like it as it is.  ;) I think it was real good but could have used some red pepper flakes or cayenne. But that is my preference. Without the heat it is good.
