Hello all,
Haven't posted in a while.
Wanted to share a brisket I did today on the PBC for my son's birthday.
Seasoned with Big bad Beef rub

Hung in the PBC

Sliced and ready

Put in the pit about 7:00 Am and pulled it out around 12:30 (used Texas crutch at about 10:30)
Let pulled it at 12:30 and let it rest until about 3:30.

Love it. Rip a basket of coals, hang meat and check it in a few hours.

I'm still scared to hang a brisket. Any issues hanging the brisket? Ever been too long and touch the coals? How big was it?

Thanks to all for the birthday wishes for my son.
As far athe brisket goes it was a 6# flat, so it was no where near the coals( had a good foot or so from the coals).
I did wrap it with some beef broth and it was very tender when I took it out of the cooler after about a 3 hr rest.

Use two hooks for bigger briskets and hang it sideways but the fat side down. This keeps the brisket moist during cooks so there is no low hanging meat; similar to hanging a full rack in the barrel. You will be surprised to see how easy it is to do a brisket.
