Just another rack of awesome PBC ribs! I think this is going to be my preferred method from now on. I've been smoking them till done, no more wrapping and no saucing. I like being able to use multiple sauces if I want on the side. These were perfectly tender.

You did a great cook, they look delicious. I don't wrap and I don't cook with sauce on. I do put sauce on the side to use as much as wanted. It looks like you cook on the grate vs the hang method?

Those were exactly 4 hours. They were more meaty near the top so they took a bit longer
