PBC Wings

Wings were cooked in the PBC using ¾ chimney of Cowboy Lump.  Temperature stayed steady at 350 degrees
with the lid partially cracked. Total cook time was 30 minutes. 


Served with store bought sweet potato fries, garlic toast and ranch dressing.


Moist and tender with crispy skin.  Delicious meal!

Yep..used one of the rebar to raise the lid.  Next time I will use a little more lump.

You're not supposed to use it with the lid cracked and 1 rebar out...and 1/2 chimney of charcoal.
That's another thing I like about your cooking, Mike...you think outside the box and think about new ways to use your cookers.

What spices are on the wings?

I tried a recipe that I found on America's Test Kitchen:

1 1/2 tsp corn starch (helps crisping)
1/2 tsp pepper
1 tsp chili powder
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp sugar

You will notice NO SALT. I brined the wings in 1/2 cup of salt water (2 quarts) for 30 minutes, then seasoned right before putting on the grill.

I will be using this one again. The corn starch, to me, works better than baking powder.
