Now a beef short rib fan

Been hearing so much lately about how awesome beef short ribs are, so I had to give them a try.  They sure were a lot meatier than the back ribs I got from Walmart quite awhile ago.

Cooked the 5 lb rack for about 4 1/2 hours to probe tender on the PBC; to about 203° internal temp. The meat started to really pull away from the first bone  while I had them hanging so finished them on the grate for the last 45 minutes or so.

Also baked some french bread, did the taters on the PBC while the ribs rested, and my wife cooked up some lovely green beans.

Everyone raved about the ribs and we all had a good laugh at the size of the dino bones. One of the best meals we have ever had. Short ribs on the PBC definitely rock.
