Amber's last PBC cook inspired me to do some beef ribs. So I picked up 2 racks of these dinosaur ribs...



The first rack seasoned with PBC all purpose rub...



The second rack seasoned with BPS Jalapeño Bacon rub...





PBC fired up using the proper lighting technique ;)



After 20 minutes coals are ready...



Into the PBC. The racks were so big they had to be cut and so heavy that I put the rack underneath them. I did not want them to fall..



After 1 hour I pulled them off...









They were really good! Thanks for the inspiration Amber ;)

Those look super muebe!!! Sandman gave me some pork ribs from his PBC, I told him not to give me any more off that thing, I'll be buying one! Don

Compared to pork ribs do you feel you get your money’s worth? I’ve noticed that beef ribs do cost a bit more and the amount of meat that you get isn't as much as with pork ribs.

Pork ribs hands down are a better value. Beef ribs do cost more and are very fatty. There is something about beef ribs however that grabs at your inner caveman ;)

They did but I had the lower grate under them for support. I was not going to chance it.
