These ribs came from Porter Road Butcher, Nashville, Tn. I have bought the majority of my beef products from them this past
year. They sell these as Texas Short Ribs.
Ribs were seasoned last night with a base coat of Texas Beef rub and top coat of Cow Cover, both from Kosmos Q.
I am using KBB with a couple chunks of pecan and cherry in the Weber kettle. I am also using the SnS and the DNG. This is 2
hours into the cook. I am cooking at 275 today.
Here they are at the 4-hour mark. They are almost probe tender. I figure another 30 minutes and they will be done. I have been
spritzing them with some pure Pom juice every 45 minutes since the 2-hour mark. The bark has set up nice and is really firm.
My plate with a tossed salad! Ribs were awesome. Very tender, juicy, right amount of smoke and the bark was perfect!
4:30 hour total cook time. I figured 6 hours at 250, so I guess this about right since I was cooking at 275.
