As I was eating ribs for breakfast I realized that charcoal is probably my favorite way to make ribs. Simple rub and no foil.

I love the flavor of charcoal cooked meats to RAD.....But, I also like wood smoked flavor. I think it is partially mood...and which meat I am cooking at the time.
