Could not be more excited about my new PBC! For my first cook I tried a rack of baby backs and a 2.5 lb piece of top sirloin. I was truly blown away by the simplicity of the process and the quality of the results! 2 hours for the ribs with an extra half hour sauced and 1 hour cook and a 15 minute rest for the sirloin. Ribs had a nice ring, perfect pull from the bone and tender, juicy texture. The sirloin was a revelation. Normally a great flavored meat but sometimes a little chewy, I was astonished at the tenderness it developed from the PBC - it was truly fork tender. Served it up with my favorite Potato Salad, Cole Slaw and Corn Bread. A smashing success!

Success right out of the box. So much for the learning curve when trying out a new smoker. The PBC has it going on  8)

Great looking first cook. Wait until you do chicken in the PBC.  :)

I always hang my meat at the 12 minute mark regardless of the coals. I've waited too long in the past for the coals to ash over and the temps are way too hot

Looks amazing!  The top sirloin...was it wrapped when you bought it or did you tie it up?  I have yet to try steak on my PBC...I can never get passed doing baby backs, jalapeno poppers, armadillo eggs...love this BEAST of a cooker!

The little sirloin roast (about 2.5 lbs) came tied. I'm gonna git some more as its on sale!

Thanks to all for the kind feedback and encouragement! Away from home for a couple days and can't wait to get back and fire her up again - SO many things I'm itchin' to try.
