Just got the PBC for Xmas and absolutely love it but i am definitely still a newb when it comes to this smoking. Doing a pork butt for first time and when using a crutch, i know you want it as tight as possible and air tight....Its still ok to puncture the foil for thermometer though right?

yup not a problem, I do it all the time

yes, be careful though you don't puncture through the bottom. i've done that twice now by accident when making a brisket and you end up with a big mess :)
