I got my feet wet today, did my first cook ever and used my new Drum. I made some pork belly burnt ends which were pretty much inedible. They were shoe leather but I could tell the flavor would have been excellent. I think they were over cooked on the smoke and couldn’t soften when I put them in the pan with butter and sugar. Next time I’ll try taking them off sooner. I had better luck with ribs. I’d say they were average, a little dry. I smoked them for about an hour at 250-275 and took them off a little late. I know because the meat pulled back from the bone a little too much before I wrapped them. I wonder if the Drum goes even faster than I thought it would. Advice welcome. Thanks!
