So for my first Grillgrates experience, I took rwalters advice from my earlier "shopping for a gasser" post...

I brined some wings for a couple of hours (I usually do this - I think it keeps them juicy), dusted them with Kosmos Q Dirty Bird rub, and onto the grill. Weber was set to the lowest setting and was plenty hot. Had to turn a burner off after 20 minutes to make a cooler 2-zone fire so they didn't burn. Brushed on some of my fave wing sauce (KC Masterpiece Private Stock BBQ Sauce from Costco, sriracha to taste, and honey), and left a few wings dry.

Bottom line. I love the grillgrates. I love the Dirty Bird rub. The dry wings (not pictured) were awesome. And I love my new Weber. We love Pit Barrel Wings, but sometimes I want a cleaner less smokey or charcoal flavor, and these wings fit the bill.
