I have been going a little buggy lately; since my back operation about 3 weeks ago I haven’t been able to do much. I have cooked a few meals but things that don’t take much prep or a lot of standing on my feet. I am anxious to get back to full time cooking.
I have made my own sauerkraut the last couple of years and have done at least 6 batches. I have wanted to do some red beets since my wife and I both love beets. I have a recipe that says you have to be careful doing beets; they have a lot of sugar so can go to alcohol. It said it was best to do in small batches and mix some turnips in with them.
Since you can use canned beets I could get these on without much work; all I had to do was peel the turnips and slice. I had three 15 oz. cans of sliced small beets and three turnips. I drained the beets and filled my half gallon jar alternating the beets and sliced turnips. I placed one large slice of turnip on top then covered with the ceramic weights and topped off with brine. The brine mix was 2 tablespoons of salt to 2 cups of water. I use filtered water and coarse grey sea salt.
The recipe said 5 to 12 days and I will go the 12 days.

After 11 days fermenting I took my beets out and placed in pint jars to store in the fridge. The beets tasted great, just a tad salty but not too bad. I didn't care for the turnips so I pitched them. I got 3 pints from the half gallon.

Not sure how sour they will get, the ones you buy at the store have vinegar and I have made them that way too. Don

Hard boil some eggs, smoke them on your grill, and add to the brine when you are done with the beets. Throw in a few jalapeños while you are at it. Good eats with a beer or three.

Don, what is the difference between fermented and pickled beets?

That looks interesting. Will be following this thread. Do you like the Perfect Pickler kit? I've seen positive and negative reviews. I'd appreciate your review.
My brother pickled some beets with hard boiled eggs and some chopped onion. The eggs had a great red color and the onions added a nice crunch. It was very good.

TentHunteR. Check out this link. I use the half sour pickle recipe. DrH I have the perfect pickler Kit and it works great for smaller containers like pint,quart and half gallon bigger batches I use the BRINER containers.

David I bought the perfect pickler mainly for the lids and air lock that fit wide mouth jars but thought the little hold down cup would work well. I always had problems keeping kraut down under the brine the first few days. The first batch of kraut I made a half gallon and had to throw it out. I had some brown goop in the hold down cup. Pam said she had the same problem but not sure if she used it again. I bought 4 inch ceramic weights that work well in my half gallon jars. Don
