Title: Thanksgiving Lamb

I bought a 38-lb lamb at Restaurant Depot to smoke for Thanksgiving.  Don't ask me why I decided to try this.  I made up a rub of Olive Oil, garlic, fresh Thyme and Rosemary, Cavenders  and a little Cayenne Pepper.  I really could not find much help on line so was pretty much on my own.  My first dilemma was discovering it would not fit in the Rec Tec whole.  I had intended to bend his rear legs under and set upright but I could not get the legs to bend and it was too tall.  I amputated the legs and laid the carcass on its side.  In the end it worked out as the Carcass was finished before the meaty legs. I got stated later than I wanted so set at 200 to get max smoke for 45 mins then kicked up to 300.  When the Carcass was done I took it out, lowered temp to 250 and let the legs finish.  I also put a 10-lb Turkey in the SRG in case some folks may not like the lamb.  In the end the lamb was awesome and everyone ate it and when they went back for seconds they took the lamb.  Sorry I forgot to get any money shots.  The average finish temp was 145.

Not like Lamb???? We had it at our wedding.....I love Lamb but it cost too much now........But along with beef it is as good as it gets.


But i do like Mint Jelly with it ???

Great job MH! Your lamb and turkey look perfect! I find that I have more fun cooking when I go into "un-charted" territory! Looks like your mission was done with flying colors! ;)

That was quite an undertaking with the lamb. Looks fantastic.  I have seen small lambs, small pigs and small goats at the Chefs Store in Charlotte.  You can order bigger ones if you are so inclined.

We love lamb around our house.  However, it is usually of the rack of lamb or lamb chop variety.  I did cook 2 legs of lamb last Easter that were really tasty.

Gee MH, now every time I walk through RD and see the whole lamb I am going to see these great pics and start daydreaming. Looks great.

Super job for your first time with lamb.   I am VERY envious.   I love lamb, but do well to grill a leg about every third or fourth year for Easter.  Wife just balks and buys a ham--even IF I have already bought the leg of lamb.    Have it butterflied and marinate in basically Italian salad dressing concoction I dream up myself.   Keep up the good work--I'll track you down next time you do that!
