Pig wings; we all know pigs don't have wings! Well maybe Tee thinks they do since I saw a pig with wings in a photo of his! I saw these on a site and thought they would be good. I would not have called them wings; all they are, are strips of pork loin chops wrapped in bacon.
They actually do have a cut from pork that looks more like a wing drummy; the shank. I see they are smoking them low and slow and call them pig wings.
I had a link of my andouille I smoked yesterday and wanted to do some pig shots like my friend Old Dave fixed at the 2015 Ohio gathering. He did sausage, sliced about ¾ inch, wrapped bacon around the edge then stuffed in some BBQ sauce and cream cheese. They looked like a bacon shot glass filled with goodies and were delicious.
Member Scally from Canada said St. Huberts was a good poutine gravy. Poutine is one of Canadas favorite fast foods. I found some on Amazon and ordered four of the dry mix packs. I thought pig wings would go well with poutine. I don't deep fry in the house so I had our daughter go get some McDonald's fries. Sorry I cheated! I had some Troyer's cheese curds to use.
I trimmed the chops and sliced each into thirds, seasoned with some Blues Hog Rub and in the fridge a few hours. I then wrapped in center cut bacon and secured with tooth pick. I added more rub to three for me. I made four of the pig shots using my andouille, added a half teaspoon of Blues Hog Tennessee red sauce and some Swiss cheese.
I heated my Traeger to 200 deg. and got the pig wings on at 5:00PM. I upped the temp to 220 deg. and was getting 230-240 deg. grill level. I added the pig shots and 3 extra slices andouille at 5:20. At 6:00 I looked and went to 250 deg. For 290 – 300 deg. Grill level to try and crisp up the bacon. I knew at the last minute I could pop them under the broiler if needed but this worked out well.
At 6:05 the daughter went after the fries and I made my poutine gravy. I had the oven heated to 205 deg. to hold the fries. It all came together and we ate at 6:30. We all like dit.
The pig wings were great and loved the poutine. Old Dave's pig shots are a winner too. The pork chops would be a little short but cut an inch slice off of a loin, then cut into 1 inch strips and fix the same way, serve in a hotdog bun and you have pig dogs!

Looks good Don! I'll have to try the pig wings and pig shots but I'm not a very big fan of poutine.

This is not exactly a low calorie, low fat feast. However, you have come to the rescue and redeemed it from being absolute gustatory suicide. It is now, due to your choice of a most appropriate and superbly coordinating and complimentary beverage, health food!
I have long maintained that whenever one orders a cheeseburger, one should always wash it down with a Diet Coke. There is this very important "cancellation" effect from the beverage that wipes out any dangerous excess. You have accomplished the same with the light beer. Bravo!
