Actually it's another "TRISKET" and there are no biscuits!!! But plenty of smoked tri-tip at 225ºF before double wrapping in foil and finishing the cook at 300ºF till the IT reached 200ºF ... Just like a brisket ... Since it takes about 2 hours for the tri-tip to reach an IT of 140ºF I decided to smoke some Johnsonville Brats for the pitmaster. The brats take about 1 hour and 20 minutes to reach an IT of 170ºF.

Getting good at this TRISKET stuff ... Running out of ways to smoke and/or cook a Tri-Tri ... This is #7 of the 12 Peeled Prime Tri-Tip roasts I bought at Costco a while back. Not getting tired of cooking a Tri-Tip roast about once a week - so I'm just going to keep cooking and enjoying them!!

I still haven't been able to get my tri-tips past an IT of 130F! I'm thinking that a couple tumblers of my favorite rye whiskey just might allow me to smoke up a trisket...... 8) :thumbup:
