I received my SnS and Drip pan the other day and couldn’t wait to give it a try. I decided to go with some NYS that were on sale at SAMS. I followed the video as close as I could. I had issues in the beginning keeping the temp under 300 and I think that was due to adding 25 briquettes. The video had the XL and I was using the regular. I should have gone with 15 to start with and I also should have just let it come down on its own.

I did a salt brine, reverse sear, flipped at an IT of 80, Started a ¾ chimney at an IT of 90, and pulled at 115. Pat dry, oil, black pepper, while grill was getting nice and hot

Seared on cold grates 1 minute, turn grates, flip, sear another minute. Repeat first two steps. Move to cold grates check IT for desired temp.

Pulled after sear. Nice crust across all of the steaks.

Just about the best steak I have done, perfect. The SnS delivers as advertised. Outstanding.

I also did the reverse sear last night with bone-in strip steaks. Used 25 coals banked with some apple wood.
Flipped at 80 as you did, and at 90 I lit am almost full chimney.
At 115 I pulled the steaks and poured in the hot chimney.
Seared the strips without bothering with the cold grate thing.
They came out perfect, just like yours.
Love the slow n sear and the drip n griddle.
